Creamy Cucumber Soup
Yield: 1 1/2 cups (360 mL)
Speed: Variable to High
Time: 1 1/2 minutes
- 1/2 cup plain or vanilla yogurt or nonfat sour cream
- 1 cup english cucumber, washed and cut into pieces
- 1 heaping tablespoon fresh onion
- 1/2 cup ice cubes
- salt and pepper, to taste
Place all ingredients in Vita-Mix container in order listed.
Secure 2-part lid. Select VARIABLE, speed #1. Turn on machine
and quickly increase speed to #10; then to HIGH. Run for
1 to 1 1/2 minutes or until smooth. Serve immediately.
Note: This is a cold soup. Serve over diced cucumbers and
boiled cubed potatoes.

- 1/2 cup soy milk
- 1/2 cup red grapes
- 1 orange, peeled
- 2 baby carrots
- 1/2 peach, pitted
- 1 cup frozen strawberries
- 1/2 cup broccoli
- 1/2 cup spinach leaves
- 1/2 cup pineapple
- 1/4 banana
- 1 cup ice
Place all ingredients in Vita-Mix container in order listed.

1 minute or until smooth. Serve immediately.
