This is a GREAT soup, and it sticks to your ribs. Men love it too!
This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.
4 oz Italian sausage
1 large potato
2 Cups Chicken broth
2 Cups kale, turnip greens, or your favorite green
2 Cups Milk
salt & cracked pepper to taste
Brown Italian sausage, set aside.
Thinly slice the potato, leaving on the skin.
In 1 C chicken broth, cook potato until tender. The potato will soak up the broth. Then add one more cup. While potato cooks, cut up the 2 cups of greens. When potato is soft, put the greens and 4 oz of sausage in the broth with the potato. Add 2 cups milk. Add salt and pepper to taste. Heat through.
Split in half. Each serving has 2 oz sausage, 1 C milk, 1/2 C chicken broth, 1/2 potato, 1 C greens. (1 protein, 1 grain and 1 vegetable)
