Wow! That's all I've got to say about that. I think Bubba may even like this as much as he likes his shrimp.
This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.
1/2 C pumpkin
stevia, pumpkin pie spice, vanilla stevia, (optional)
1/4 C oat bran
2 oz sugar free plain yogurt
2 Tbs. sugar free maple syrup
Heat pan sprayed with Pam. Mix oat bran, egg, pumpkin, stevia, vanilla stevia and pumpkin pie spices together. Drop into pan and spread into pancake...about 1/4 inch thick. Cook about 2 minutes...until bottom feels firm...flip and cook an additional 2 minutes until done. Mix stevia into yogurt, spread on pancake, drizzle with 2 T sugar free maple syrup....totally enjoy this!
If your fat allows for it....a Tbsp of crushed pecans would really top this off.
