Oat Bran Muffins (not Cea HOW but healthy)

This recipe is a healthy alternative that uses agave nectar which is great for people with diabetes or high blood pressure because agave nectar has a low glycemic index so it's slowly absorbed into the the body preventing spikes in blood sugar. This is an altered recipe from "Simplify Your Life" by Elaine St.James. This is not a CEA-HOW compliant recipe. If you are in a "How" program please check with your sponser.
This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.

oat bran   2 1/4 c Grain

baking powder   1 Tbspn

agave nectar or sugar free maple syrup   1/4 cup

chopped almonds   2 Tbspn Fat

raisins or blueberries   handful Fruit

Nonfat milk   1 1/4 c

egg white (or egg substitute)   2 Protein

large over ripe bananas   2 Fruit

Vita-Mix Super 5200

Combine all dry ingredients in a mixing bowl. Blend all other ingredients into a puree and mix thoroughly with the dry ingredients. Fill muffin tins, allowing some room for mix to rise. If you use blueberries, it's easier if you add them by hand to the filled muffin tin. Bake at 450? until top of muffins are brown (about 15 minutes). Makes approx. 1 1/2 dzn

Serving Suggestion: As soon as they are cool bag them in a ziploc and place in freezer. When ever you want one pop it in the microwave for 30 sec. *I also added 1/2 cup of finely chopped walnuts and I used raspberries instead of blueberries. I chopped them fine and added once half the batter was in the tin so it would be a raspberry center. Worked well they are yummy and have a sweet treat in the center. ENJOY!!
