This new and improved version is so amazingly good, if you liked the old one, you'll love this. (a "vita mix" is helpful for this, but a good blender will do.)
This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.
2 large tomatoes, 1 lg zucinni (for pasta)
8 oz mushroom, onion, green pepper, sun dried tomatoes
basil, oregeno, garlic salt to taste
non stick spray
Spray frying pan with nonstick spray and saute mushrooms, onions and green pepper until soft...seasoning with garlic salt and spraying with nonstick spray as you go. Wash the tomatoes and zucchini. Quarter the tomatoes and add to vita mix, add, sundried tomatoes,(2 t each basil, oregeno) and 1/2 t. garlic salt. Blend until smooth. Pour over onions, mushrooms and green pepper heating only to room temperature to not kill the enzymes. Spiral slice your zucchini, pour sauce on top and enjoy. (The fresh tomato sauce gets watery on your plate due to all the juice.)
A nice big green salad with spring mix, tomatoes, onion and cucumber...or what ever you would like....or a ceaser salad is a good option. For "garic toast" I toast Ezekiel or Food 4 Living sprouted bread and add 1 T Newmans ceaser dressing....awesome! You can add parmesan cheese to both the spaghetti sauce or the ceaser salad for your protein or have 8 oz stevia sweetened yogurt for desert. Bon Apatit!
