This was inspired by my recent trip to Mexico.....I've already had it about 5 times....good stuff : )
This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.
16 oz diced tomato, onion and cucumber
4 oz fresh or frozen (thawed and drained) corn
1/2 small avocado or 1/4 large
hand ful of fresh cilantro, 1 t stevia and juice from 1/4 lime
4 oz drained and rinsed black beans
Add all ingredients to a large bowl and mix well, serve.
You could also do it as 1/2 cucumber, tomato, 4 oz onion and spring mix lettuce and serve the salsa salad on top of the lettuce....that will give you another veggie.
Enjoy with a burrito salad or 2 slices of sprouted grain bread with re-fried vegetarian black beans, or 2 oz of soy nuts, 1 C of soy milk or another 1/2 protein if you are not so hungry or are on the go.
