This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.
2 Tomatoes, zucchini or yellow squash
1 Vegetable
8 oz celery, diced onion, green pepper and sundried tomatoes
1 Vegetable
4 oz corn, fresh or (frozen thawed by rinsing w/warm water)
1 Grain
1 T chili powder, 1 t turmeric, 1 t curry, 1 t cumin
garlic salt, non stick spray
In a large pan heated to med/high and sprayed with Pam, heat onion and green pepper, then add diced zucchini or yellow squash, (cook until browned or caramelized spraying with Pam and adding garlic salt). Turn heat to low. In the "Vitamix" add tomatoes quartered and halved, (with the skins on), celery, sundried tomatoes, and spices. Blend on low, slowly raising the speed as the vegetables blend, (you may need your tamper). When well blended, turn to high for about 60 seconds or until well blended. Add to pan along with thawed or fresh corn and heat only to room temperature. Serve.

Suggestion:
8 oz of pinto or black beans could be added for the protein or 4 oz beans with 1 oz of Mexican cheese. It may also be enjoyed with a smoothie for desert.
Also good with this is a slice of Ezekiel toast with 1/8 to 1/4 avocado spread on it...and some salt.
