A great side dish to a chicken or Mexican Soup dish!
This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.
1 C Cauliflower, grated
1 small White Onion, diced
1 tsp Butter or Oil *
1/2 C Salsa
1 Clove Garlic
1/8 tsp Garlic Powder
In a very large skillet with a lid, saute the onion in butter and/or oil until tender. Stir in the grated cauliflower, then the remaining ingredients. Mix well. Cover and simmer 10-12 minutes until the cauliflower is tender, but not mushy, stirring occasionally.
Serve as a side dish with a Spanish themed dinner.
* Use coconut or other oil for vegan/21 day cleanse.
