A yummy version of lasagna without the pasta but still tastes like the real thing! A wonderful family dinner.
This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.
3 cups cooked rice (brown or white work best)
3 raw eggs, beaten
1/2 lb ground beef, turkey, chicken, TVP cooked
3-4 cups marinara or spaghetti sauce
6-8 oz Mozzarella cheese or your choice
1.Spray baking dish with non-stick spray
2. Mix cooked rice with eggs in a bowl. Season to liking
3. Layer some rice in even layer in dish and cover with enough sauce to cover
4. Sprinkle scant meat over sauce.
5. Repeat to create 3 layers of "lasagna". Top with mozzarella cheese or cheese of your choice. I typically use less mozzarella and a little parmasan cheese on top.
***I make my own sauce: Saute onion, carrot, celery and green pepper in 2 tsp Olive oil, add a 32 oz can of crushed tomatoes, a tsp of Italian Seasoning and a pinch of red pepper flakes.
Bake at 350 for about 45-55 minutes. Great with a green salad or a summer salad (tomatoes, cukes, and sliced onions in homemade Italian dressing). Also freezes well and reheats like a charm in the microwave. Enjoy!
