Perfect fall breakfast! I just tried these on Alexis yesterday and she asked for them again today.
This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.
1/4 C oat bran
1/4 C unsweetened apple sauce
1 T arrow root, 1/4 t salt, 1 t cinnamon, 1/2 t ginger
vanilla, 1 T water, non-stick spray
1/4 C cottage cheese
2 T sugar free maple syrup
Mix all dry ingredients. Pre-heat pan to med-high, spay with non-stick spray. Add Egg, vanilla, applesauce and water, mix well. Pour into about 3 pancakes into the heated pan. When the edges firm up, flip them over and cook other side. Divide the cottage cheese equally between the pancakes, drizzle with syrup and serve.
You will need the additional 1/2 serving of fruit of your choice. Yogurt may be used instead of cottage cheese. 1 Tbs of crushed nuts may be used as a topping if on maintenance.
