Yummy and crunchy raw salad to have ready in the refrigerator. Great for a quick vegetable for home or to take along.
This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.
Chopped cauliflower, diced carrots and celery
Diced red bell pepper
Dressing: Hand full of fresh basil or 1 T dried
1/2 C apple cider vinegar
salt, stevia, dill, oreno to taste, (1/2 t each)
1/2 C olive oil
Magic bullet or other small blender
Chop vegetables and add to a glass jar well mixed. Add all dressing ingredients to the magic bullet and fill the rest of the way with water. Pulse until well mixed. Pour over vegetables and allow to marinate over night. This can be eaten from all week.
1 C equals 1 vegetable....very little dressing soaks in, I just count it for my fat.
