Use this to make ahead for an easy meal or as a family dinner. Great for the Daniel fast.
This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.
2 C split peas
1 C barley
3 stalks celery, chopped or in a food processor
3 carrots, chopped or in a food processor
1 onion diced, 3 cloves garlic minced, (or out of a jar : )
1 large rutabaga, chopped or in a food processor
1 32 oz box of vegetable broth
7 1/2 C water
bay leaf, 1 1/2 t salt, 1/2 C chopped parsley
1/2 t each; basil, thyme, pepper
In a large pot over medium high heat, saute the onion, bay leaf and garlic in non-stick spray until the onions are translucent. Add the water, peas, barley, salt and water. Bring to a boil and reduce heat to low. Simmer for an hour and a half stirring occasionally.
Add the carrots, celery potatoes, parsley, bsil, thyme and pepper....you will also have to add the prepared broth, (most of the water will have absorbed into the peas and barley). Simmer for another hour or until the peas and vegetables are tender.
4 Cups equals 1 protein, 1 grain and 2 vegetables. The pot should make a total of 16 cups.
