This is easy and healthy for the family and as an individual serving. For a vegetarian version, simply omit the chicken and add another egg or legume.
This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.
2 oz diced cooked chicken
3 oz cooked brown rice + 1 oz frozen peas
1/2 C diced onion, green pepper and match stick carrots
Braggs or soy sauce
ginger, garlic salt, spenda or stevia to taste
Heat pan to medium/high, spray with oil and stir fry onions and green pepper until soft, (season with garlic salt), add carrots, peas, rice and chicken, stir frying until warm. Scramble egg in a separate bowl and pour into the pan over the mixture, stir fry until egg is cooked...about 1 1/2 minutes or so. Wisk together Braggs, ginger, splenda/stevia and stir in. Serve.
This is easy to make for yourself and the family at the same time....just use two pans, double or triple the amounts in the other pan for the amount desired.
