We are doing the cleanse, Eric and Alexis both loved this...it was supposed to be two dinners, but there wasn't enough left over : )
This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.
1 C dry mixed brown and wild rice, or just brown
2 C vegetable stock to cook it in
2 Cans drained and rinced chick peas/garbanzo beans
1 med onion, 1 red bell pepper, 1 - 2 cloves garlic
spray oil, fresh basil, salt and pepper to taste
Precook the rice in the broth, (I use a rice pot). Saute' the sliced onion in olive oil, add sliced bell pepper, when vegetables are soft, add the rice and chick peas, minced garlic and about 1-2 more tablespoons of broth. Allow to simmer about 5 minutes.
This goes well with a tossed salad. For making single servings, just measure the amounts you need and cook separately.
