The consistency of this feels so rich in your mouth....but it's all vegetables! Keep it vegan or serve with Parmesan Cheese...it's all good!
This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.
Green or Red Bell pepper
2 small tomatoes
Zucchini or whole Durham wheat pasta
3-4 sun dried tomatoes soaked
1 oz Parmesan cheese if desired *
garlic salt and pepper to taste
Heat oven to 400. Chop eggplant, onion, bell pepper and tomato in to 1 inch pieces. Spray oil while tossing. Sprinkle with garlic salt. Bake uncovered for 45 minutes - 1 hour until tender, turning once during cooking time. Transfer to a food processor, add soaked dried tomatoes, pulse until desired consistency. Spread over prepared zucchini pasta or whole Durham wheat pasta. Dust with Parmesan cheese. Serve.
This is a hearty meal on it's own....you can eat all of this...or if sharing, serve with a tossed salad. Pudding for desert tops it off. Bon Apitit : )
