Eric even liked this. There is about 800 calories in the entire loaf....and it makes about 8 good size slices.
This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.
1 1/2 C Oat Bran
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1 C "Stevia in the Raw" or "Splenda"
1-2 C finely shredded, unpeeled zucchini
1/4 C unsweetened apple sauce
1/2 C pecans and or sliced almonds
1/2 tsp salt
1 tsp xanthan gum
Heat oven to 350. In a food processor or bowl mix together oat bran, cinnamon, nutmeg, xanthan gum and salt. In another bowl, (or put the dry mix in a bowl freeing up the food processor), blend together egg, sugar, zucchini and apple sauce until moistened. Fold in nuts. Spoon batter into greased bread pan. Bake at 350 for 50-55 minutes. Cool for 10 or more minutes. Wrap and store in refrigerator for at least 4 hours before slicing.
