You would never know that it's not made with lots of cheese....the consistency is really good! This is also very good the next day.
This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.
Sliced zucchini, (about 2 large)
2 packages sprouted tofu
2 packages frozen spinach
1 1/2 C spaghetti sauce
2 tsp minced garlic
1 1/2 T each parsley and sweet basil
Food processor or large bowl
salt and pepper to taste
Pre-heat the oven to 350. In the food processor, (or bowl)put tofu, spinach, garlic, parsley, basil, salt and pepper. Blend until well mixed. (If you use a bowl, use your hands to mix it well). Spray 9 x 12 pan with oil, layer zucchini, then tofu mixture, then spaghetti sauce, repeat. Bake covered for about 30-40 minutes until zucchini is tender.
Serve with a tossed salad of course.
