This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.
small pumpkin baked
approximately 1 C sugar free almond milk or soy milk
2 T chia seeds
cinnamon, allspice, nutmeg, and ginger to taste
Stevia or Xylitol
Scrub pumpkin, poke holes in it and bake for about 1 hour or until knife goes in easily. Cut open and allow to cool to warm before scooping seeds out. Scoop out pumpkin into bowl, add spices, chia, almond milk and sweetener. With a hand mixer, blend until smooth.
Serve warm or cool in the refrigerator. This can be measured out as 1-2 cups pumpkin for a vegetable, 1 T chia for 1 maintenance fat and 1/2 to 1 C soy or regular milk as 1/4 to 1/2 protein.
