This is so satisfying and filling, you won't even miss the meat! The amount is very easy to adjust.
This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.
3 Green peppers
3 carrots diced, 3 stalks of celery diced, 1 C onion diced
1 C mushrooms, 1 small zucchini
1 C cooked brown or wild rice
1 Can drained and rinced black beans
Spaghetti sauce to liking, (1 - 2 cups)
Pre-heat oven to 375. Add all ingredients except for the green peppers to a large bowl and mix well. Cut green peppers in half, place in baking dish. Spoon in the mixture. Cover and cook for 45 - 60 minutes, until tender.
This was great with a kale salad and Raspberry vinaigrette dressing, all of the taste buds are covered : ) Also, you can change it to a Mexican dish by using corn instead of rice...or use both....and salsa. If on 1st 30 days, leave out the rice/corn.
