Make this ahead of time for a quick and easy vegetable to take to work for lunch.
This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.
1Small head cabbage cut into 1 inch squares
2Carrots, sliced into 1/2 inch diagonals
2Red peppers cut into 1 inch squares
1 Cup Rice Vinegar
2 Cubes of Ginger, 2 inches, slightly crushed
(Up to 8) dried chili peppers, cut in half
8Cloves of Garlic, Slightly crushed
1 quart Water
Combine all marinade ingredients (Chili peppers to taste) and place vegetables in 4 quart mixing bowl. Pour marinade over vegetables and add weight to press vegetables down. Refrigerate for at least three days, turning vegetables in marinade.
Remove chili peppers, garlic and ginger. Drain for each serving.
