Chopped Mexican Salad
This can be raw or vegetarian...either way it's healthy and delicious...another Fiesta in your mouth!
 
12 oz romaine lettuce, radishes, tomato, cucumber   1 1/2 Vegetable
4 oz sprouted adzuki beans or canned black beans   1/2 Protein
1 ear fresh corn or 4 oz frozen (thawed)   1 Grain
 
  Instructions:  
  Toss everything together in a large bowl...you are ready to go!  
  Serving Suggestion:  
  The avocado dressing was made to go with this. I like it with 4 oz marinated mushrooms or kim chee for a feeling of something "cooked" with it...and of course....4 oz sweetened yogurt for desert : )
