This Italian style dish could be used as a side dish or spruced up for an entire meal.
This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.
1 garlic clove, minced
1 finely chopped onion
1/2 C tomato sauce
1-3 tsp oregano
Salt and Pepper (To Taste)
1 Spaghetti squash
Spray sauce pan with non-stick spray. Add oil, diced onion and garlic. Saute' until soft. Add 1/2 C tomato sauce and oregano. Cover and cook on low heat...15-20 minutes.
Pierce squash in several places and place in a bowl with 1/4 C water. Cook on high in microwave for 12-15 minutes. When done, cut in 1/2, remove seeds. (you can also use the "easy squash" recipe) With fork, scrape the inside of squash. Drain in colander. Measure 1 C of squash. Add tomato sauce. Place in baking dish and bake at 350 for approximately 1 hour.
1 C or 8 oz = 1 serving. Add hamburger and/or parmesan cheese for a complete Italian dinner...using 2 servings of the vegetable.
