Cranberry Apple Fruit Relish
This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.

Whole Raw Fresh Cranberries   1 Cup Fruit

Large Sweet Apple (I use fuji)   1 Cup Fruit

Splenda or Stevia (to create juice) 6 - 9 packets

Peel and de-core apple, slice into 1" segments measure 1 cup worth. Wash cranberries (make sure to pick out the soggy bad cranberries from bag) measure 1 cup. Chop both the apples and cranberries together into small course pieces in a food processor, grinder or chopper of your choice (don't over pulse or you will end up with mush). Transfer into bowl and mix in sweetner (this creates a little juice). Let chill overnight. To make a side dish (which is great for the holidays) use 3 cups of each fruit (1 bag of cranberries & 2 med./lrg. sweet apple) and 1/2 cup of stevia/splenda, chop as described above (1c of each cranberry and apple) add sweetner after chopping all fruit (this creates a little juice). Chill overnight. Stays fresh 2 weeks in sealed container in fridge.

Serving Suggestion: Single serving makes 1 cup chopped, 1/2 cup chopped relish= 1 fruit serving. The side dish makes 3 cups chopped and 1/2 cup= 1 fruit serving. I love it plain but sometimes I mix it into plain yogurt.
