This is a hearty vegetarian dish guaranteed to satisfy even the biggest of appetites.
This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.
4 oz. uncooked firm or extra-firm tofu
2 large cloves garlic, minced
4 oz raw, peeled carrots
4 oz raw green beans
4 oz asparagus or broccoli
4 oz canned, sliced water chestnuts, drained
2 oz ricotta cheese
1/2 C tomato sauce
Preheat oven to 350. Slice tofu into 1/2 inch slices. Spray nonstick pan. Let pan heat 1 minute. Put tofu in pan with minced garlic on top. when brown, flip and lightly brown other side. Remove & cut inot 1 inch pieces. Place in mixing bowl.
Slice vegetables into bite-size pieces; add to mixing bowl. Add water chestnuts. Add ricotta cheese, mix well until ricotta has been evenly distributed. Add tomato sauce. Lightly mix until distributed. Place mixture in baking dish (sprayed with not-stick spray). Cover. Bake for 30 minutes.
1 Protein and 2 vegetables. For lunch or dinner a side order of Ezekiel bread with 1 Tbs of oil ceaser dressing would complement this and of course an 8 oz salad with dinner.
