This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.

1/2 C cooked quinoa   1  Grain

1/8 to 1/4 avocado   1 Fat

8 - 12 oz alfalfa spouts, salad onions, cucumbers, tomato   1-1/2 Vegetable

2 T lemon juice, small bunch of cilantro

Put cooled quinoa, avocado, cucumber, salad onions, alfalfa sprouts and cilantro leaves into a large bowl and toss with lemon juice. Transfer to plate and drizzle with the olive oil. Top with the tomato slices.

Serving Suggestion: Sprouted lentils would be good instead or with the quinoa to add protein or to keep it raw.
