This is a crunchy munchie energy lunch....and mostly raw.
This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.
1/2 C cooked quinoa
1/8 to 1/4 avocado
8 - 12 oz alfalfa spouts, salad onions, cucumbers, tomato
1 t oil, (optional)
2 T lemon juice, small bunch of cilantro
Put cooled quinoa, avocado, cucumber, salad onions, alfalfa sprouts and cilantro leaves into a large bowl and toss with lemon juice. Transfer to plate and drizzle with the olive oil. Top with the tomato slices.
Sprouted lentils would be good instead or with the quinoa to add protein or to keep it raw.
