This is healthy and wholesome....you feel like you're really taking care of yourself with this....it's mmm good....with no preservatives. (see the family version at the bottom)
This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.
2 chicken thighs (with skin and bones)
2 large carrots, 1 large celery stalk
2 oz dry (whole durum wheat pasta) (I like rotini)
1/2 C diced onion, garlic salt and pepper, parsley
3 cups water
In a large pot cover chicken with water and add onion, garlic salt and pepper. Bring to a boil then simmer for about an hour to an hour and a half. Slice washed celery and peeled carrots. Remove cooked chicken from pot, set aside to cool. Add carrots and celery to pot, bring to boil, add dry pasta, then turn heat down...heat until vegetables and pasta are tender. Remove skin and bones from the chicken, dice and add to pot. Serve. (it's easier than it sounds....but you want to do it on a day that you're hanging around the house).
Family version: 4-6 chicken thighs, 1 1/2 - 2 lbs carrots, stalk of celery....and a bigger pot and more water.
Good with a green salad....I use 1 chicken thigh and save 1/2 a protein for a desert : )
