This is great to make in a gallon container and just take as you need....a wonderful way to use all of the healthy fresh fall produce coming in!
This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.
2 lg zucchini thinly sliced
1 large or 2 med tomatoes cut into small chunks
1 med onion thinly sliced
8 oz sliced mushrooms, optional
2/3 C oil, 1 clove garlic minced, 2 T splenda
3/4 C salad vinegar, fresh or dried basil
salt and pepper to taste
Thinly slice and layer the vegetables. In a shaker or Magic Bullet combine, oil, vinegar, basil, garlic, splenda, salt and pepper, shake well or pulse until well mixed. Pour dressing over the veggies. Chill for at least 2 hours before serving. Will last in the refrigerator for about 1 week.
1 C or 8 oz equals one serving of veggies. Count the marinade as one fat.
