This is a nice big warm meal that's just soothing to the soul.
This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.
2 small heads of broccoi, one stalk celery
8 oz diced celery and onion
2 C chicken or veg broth, or 1 cube disolved in 2 C water
2 C unsweetened soy, almond or coconut milk or regular milk
2 T arrow root
1 tsp butter, (optional)
salt and pepper to taste
4 oz potato
Frontier butter flavor, (about 1/4 to 1/2 tsp)
Saute the onion and celery in spray oil until the onions are translucent. Add the broth, broccoli and cut potato. Simmer until you can easily poke a fork through the broccoli and potato. Remove from heat. Transfer the cooked veggies to a blender and blend until smooth. In the pan add your butter...or a little milk if omitting the butter....the butter flavor and mix until the arrow root dissolves into a paste, add the milk and heat just until it bubbles, add the broccoli mixture, stir and enjoy.
This could be your entire meal if you like or split it in 1/2 and add a side salad and yogurt....I personally just ate the whole pot : ) This could feed the family as well. Omit the potato for 1st 30 days. It's also good without the milk.
