Marinated chicken breast smothered in mushrooms, onions and cheese....My family loves this....I do too : )
This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.
1 Chicken breast per person
1 oz Italian or Mazarella cheese per person
Wishbone Italian dressing for marinade
red onion and mushrooms
1 t oil per person or non-stick spray and garlic salt
Poke holes in boneless, skinless chicken breasts with fork, pour Italian dressing on to coat....(it won't soak more than 2 tablespoons in). Allow to marinade in the refrigerator for an hour or two....it can be 1/2 a day...no problem. When ready bake in 375 oven for about 40 minutes. While baking get other vegetables ready for dinner and saute' the mushrooms and onions with the oil and garlic salt...just until lightly browned. After 40 minutes check to make sure the chicken is done, (cut into the middle of the biggest one, it should be white with clear juices...no pink). If done, put in the frying pan with the onions and mushrooms to brown the top and bottom, (about 3 minutes on each side). Drain the juice from the baking pan. Put the breasts back in, top with the mushrooms, onions and cheese and put back in the oven just to melt the cheese...about 5 min or less. Serve.
Great with steamed vegetables of your choice, a salad and if you can, a 1/2 cup of brown rice.
