Simple, quick and delicious. Rice and beans served on a bed of romaine and tossed with a sassy dressing.
This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.
6 oz romaine lettuce
1/2 C salsa
1/2 small or 1/4 lg Avocado or Avocado Wasabi dressing, (mayo or other creamy dressing)
4 oz brown rice
4 oz black or pinto beans
Measure lettuce in a large bowl, (big enough for mixing). In a smaller bowl mix together dressing and salsa, toss into lettuce. Top with rice and beans, serve.
Tip. Use vegetable broth to cook the rice for added flavor or simply add a bouillon cube to the water. An ounce of cheese could also be added to the top if desired along with a T of sour cream if you have the allowance for the fat. (Obviously this will now be vegetarian instead of vegan).
