You can make this ahead and the dressing won't wilt the kale like it would lettuce....and it's great for detoxifying!
This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.
1 or 2 heads of kale
carrots, broccoli, celery, jicama, beets
Wash kale, remove stem by just pulling the kale off, then tear into bite size pieces....into a very large mixing bowl, squeeze the juice of 1 lemon onto it and massage in with hands to marinate. In the food processor, chop up carrots and broccoli or cauliflower....any hard vegetables that sound good to you. I like to dice up the jicama and celery very small but not process it. Mix 1/3 - 1/2 Avocado Wasabi Dressing by massaging it into the leaves by hand. Add the processed vegetables and the diced vegetables. Mix well with hands....and lots of love : ).
8 oz = 1 vegetable and 1 fat. This will keep in the refrigerator for several days making it easy access during busier times. I also like to add diced tomatoes and cucumber and sometimes thawed peas.
