This is a good breakfast or served with flax seed crackers...and amazing party dip!
This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.
1/2 onion, chopped
3 cloves garlic, minced
1 T olive oil
2 C fresh spinach
1/2 C cauliflower, chopped small
1 package firm tofu
1 package silken tofu
3 Tbs soy sauce or Braggs
1 T nutritional yeast
1/2 t ea garlic powder and salt, 1/4 tsp pepper
Pre-heat oven to 375 degrees and lightly grease a pie pan. Saute' onions and garlic in olive oil,(or coconut oil), for 2-3 minutes, add cauliflower. Heat an additional minute or two, then add spinach and heat until wilted. Allow to cool, removing any extra moisture.
Blend or mash together the silken and firm tofu together with the soy sauce, nutritional yeast, garlic powder, salt and pepper until smooth. Gently fold in the cooked vegetables, then transfer to a baking dish.
Bake for 35-40 minutes, or until set.
Remove from oven and allow to cool slightly before serving; this will help it set and not fall apart when cut into.
