Sooth your soul with this delightful warm Indian spiced soup.
This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.
1 1/4 cups yellow spit peas, rinsed and drained
1 large onion, minced
2 quarts vegetable bouillon
2 C almond/coconut milk
4 Tbsp olive oil
1 pound fresh pumpkin meat, cubed
1 tsp ground cinnamon
1/4 tsp ground ginger 1/4 tsp powdered saffron
1-2 tsp turmeric, 3 Tbsp minced Italian parsley
salt and pepper to taste, pepitos for garnish
1. Put yellow peas, onions, and bouillon in medium size saucepan. Bring to a boil, then lower heat and simmer, partly covered 40 minutes or until peas are tender
2, Add salt and pepper, olive oil, cinnamon,ginger,saffron, and pumpkin. Simmer about 30 minutes, until pumpkin falls apart. Adjust seasoning and sprinkle with parsley and pepitos.
