Kale is at the top of the charts for healthy greens. According to David Wolfe, a meal with greens, fat, citrus and a sweet fruit....although this is a low sugar sweet fruit....is balanced. This tastes so good it rarely makes it to the refrigerator, but can be made a head a day or two in advance.
This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.
Head of Kale
1/2 C raspberries, (fresh or frozen unsweetened)
juice from 1 lemon
1/2 Tbs each olive oil and Apple Cidar Vinegar
2-4 packages stevia....to taste
1/4 tsp salt
Wash, de-stem and tear the kale into bite sized pieces in a large bowl. In a Magic Bullet or Blender add raspberries, lemon juice, oil, ACV, stevia and salt, blend. Pour over kale and massage into kale with clean hands. Transfer to a bowl and chill or serve.
This is great on it's own or as a side salad.
* For 1st 30 days just measure out 2 T of dressing and desired amount of Kale at dinner.
