This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.
1 T coconut or olive oil
1 large onion chopped
1 pound carrots chopped
1 bunch of celery chopped
Salt, (Himalayan Sea Salt) and Pepper, to taste
3 t minced garlic, or 3 cloves minced
1 14.5 oz can of diced tomatoes
1 T rosemary
16 oz bag of lentils rinced
1 Container prepared vegetable broth, or make 4 Cups
Heat oil in a large soup pot. Add the onion, carrots and celery and cook until tender, about 7 minutes, stirring occasionally. Add the garlic and cook for another minute.
Add the tomatoes and their juice, broth, 2 Cups of water, rosemary, lentils salt and pepper. Bring to a simmer, stir, heat for 30 minutes or until lentils are cooked. This tastes good right away but even better the next day!
Sliced cucumbers or a salad make this an easy filling meal.
