This recipe is sugar-free flour-free. It contains no sugar no flour and low carbohydrates.
1 1/2 C Oat Bran
1/4 C sugar free peanut, almond or soy nut butter
1/4 C Olivio coconut spread
2 T cacao
1/4 C almond milk
1 C "Stevia in the Raw"
1 t vanilla
0 calorie Toronni's syrup for thinning, ( I used chocolate and vanilla)
Bring to a boil; Olivio coconut spread, almond milk, Stevia in the Raw and cacao for 1 1/2 minutes stirring constantly. Remove from heat, stir in peanut/soy nut butter, vanilla, then add oat bran 1/2 C at a time, mixing well each time. If it gets too thick add the Toronni's syrup, (or water), to thin. Scoop out with a teaspoon and shape allowing to cool on waxed paper. Makes about 21 cookies.
I used 7 cookies, or 1/3 of the recipe as one serving. Each serving contains 343 calories, 14 g of protein, 25 g of fat, 10 g of fiber and 1.4 g of sugar.
